400g butter pumpkin puree
1/3 cup oil
1/2 cup orange juice
1 1/4 cups brown sugar
1 3/4 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon powdered ginger
1/2 teaspoon baking soda
1 teaspoon cider vinegar
Preheat the oven to 190°C and grease a muffin tin.
Mix the pumpkin puree, oil, orange juice and sugar in a bowl until smooth.
Add the flour, baking powder, baking soda, salt, cinnamon and ginger and mix.
Finally add the cider vinegar and mix again.
Pour the batter into each muffin tin and bake in the oven for 20-25 minutes.
Poke a toothpick and check if it is dry. If yes, it's ready!
