Ingredients: 400g spaghetti 2 tablespoons olive oil 3 boiled artichokes 1 cup shiitake mushrooms 1/2 cup cooked peas 1 red onion 3 garlic cloves 1 cup unsalted raw cashews 1 cup fresh basil Juice of half a lemon Salt and pepper 1ย teaspoonย garlic powder Grated cheese (optional) ย  Instructions Soak the cashews in boiling water for at least 30 minutes. Cook the spaghetti in boiling water, using the directions on the package. Reserve 1/2 cup of theย boiled water.
