Healthy cocoa brownie with avocado

We all know and love the classic brownie, moist and full of chocolate. For many, this could certainly be breakfast, lunch, or a snack every day!

That's why this healthy cocoa and avocado brownie brings together the best of both worlds, so we can enjoy this dessert more often during the week! This recipe, shared by our Equal Foodie Bárbara from the @greensandnuts page, is incredible because it uses very natural products in its composition, such as: spelt flour, avocado, coconut sugar, eggs, and much more! Plus, it has a delicious sauce instead of the typical scoop of ice cream. The combination of apple, pear, and cinnamon gives this sauce a truly special touch.

The result? An incredibly delicious dessert that you'll hardly be able to leave all of on your plate! Shall we head to the kitchen?

Ingredients:
Brownie:
  • 2 avocados
  • 3 eggs
  • 240g of 70% cocoa chocolate
  • 100g of wholemeal spelt flour
  • 120g of coconut sugar
  • 1 tsp of baking soda
  • 1 pinch of salt
  • 125g of natural yogurt
  • 2 c. chocolate chip soup
  • 1 handful of hazelnuts
  • Cocoa powder (as needed)
Cream:
  • 2 pears
  • 2 apples
  • Juice of 1 lemon
  • Nutmeg to taste
  • Ground cinnamon to taste
  • 2 tablespoons of coconut oil
  • 200 ml of plant-based milk
  • 1 tbsp of sesame seeds

In a food processor, combine the avocados and blend until smooth. Melt the chocolate in a double boiler and add it to the avocado mixture. Stir until you have a smooth, creamy texture. Set aside.

In a bowl, mix the flour, coconut sugar, baking soda, salt, chopped hazelnuts, and chocolate chips. To the avocado and chocolate cream, add the 3 eggs and the natural yogurt. Mix well and pour over the previous mixture. Mix everything until you obtain a homogeneous dough. Grease a rectangular baking pan with coconut oil and pour in the mixture. Bake in a preheated oven at 180ºC for about 30 minutes.

For the cream: cut the apples and pears into small cubes. Add the lemon juice over the fruit and place them in a frying pan with 2 tablespoons of coconut oil. Add nutmeg and cinnamon powder to taste and cook over medium heat until the fruit softens.

In a food processor, blend the previous mixture with 200 ml of plant-based milk. Finally, add the sesame seeds. Dust the avocado brownies with cocoa powder and serve them with the apple, pear, and sesame cream. Finish with chopped hazelnuts.
