
Do you love a good risotto, but are you tired of always eating the same flavors? Today we have this great suggestion from Healthybyvero !
Risotto is a dish of Italian origin, with rice as its main ingredient. A specific type of rice is used in its preparation, which when cooked slowly releases its fiber and absorbs the liquids in which it is cooked, creating an extremely creamy and comforting dish, full of flavor.
Here we are already fans of this type of dish, in fact one of our favorites is without a doubt the Shiitake Mushroom and Butternut Squash Risotto !
For today's dish we wanted to bring you a rich and super nutritious dish, which combines peas (rich in protein) and spinach (rich in calcium, magnesium and phosphorus) is a delicious and very nutritious recipe, a spinach and pea risotto!
Ingredients:
- 1 drizzle of olive oil
- 200g frozen peas
- 300g if fresh
- 1/2 onion
- 3 cloves of garlic
- 1 cup of arborio rice
- 1 glass of white wine (optional)
- 1 cup of rice
- 100g grated parmesan cheese
- 1l of vegetable stock
- 1 teaspoon ghee butter (can be regular butter)
- 1 handful of fresh parsley
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Arugula
- Lightly roasted pumpkin and sunflower seeds
- Hemp seeds
- Parmesan cheese
Preparation:
- Chop the onion and garlic and sauté them in a frying pan until the onion becomes translucent.
- When sautéing, add the washed rice together with the wine.
- Allow the alcohol in the wine to evaporate completely and gradually add a ladleful of stock at a time, until the rice doubles in volume.
- Meanwhile, in a separate pan, sauté the spinach with a little garlic and blanch the peas in a pan of boiling water for 2 minutes.
- In a food processor, blend some of the blanched peas (save the other part for last), the sautéed spinach, lemon juice, salt and pepper.
- When the rice is almost ready, add the spinach puree, parmesan cheese and ghee butter.
- Finally, add the remaining peas and the accompaniments and it's ready to enjoy.
