Spinach and pea risotto 🫛

They love a good risotto, but are they tired of always eating the same flavors? Today we have this great suggestion from the Healthybyvero page!

Risotto is a dish of Italian origin, with rice as its main ingredient. A specific type of rice is used in its preparation, which, when cooked slowly, releases its starch and absorbs the liquids in which it is cooked, resulting in an extremely creamy and comforting dish, full of flavor. We are already fans of this type of dish; in fact, one of our favorites is undoubtedly the Shiitake Mushroom and Butternut Squash Risotto !

For today's dish, we wanted to bring you a rich and super nutritious meal that combines peas (rich in protein) and spinach (rich in calcium, magnesium, and phosphorus). It's a delicious and very nutritious recipe for spinach and pea risotto!

Ingredients:

  • 1 drizzle of olive oil
  • 200g of frozen peas
  • 300g if fresh
  • 1/2 onion
  • 3 cloves of garlic
  • 1 cup of arborio rice
  • 1 glass of white wine (optional)
  • 1 cup of rice
  • 100g grated Parmesan cheese
  • 1 liter of vegetable broth
  • 1 teaspoon of ghee butter (regular butter can be used)
  • 1 handful of fresh parsley
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Arugula
  • Lightly toasted pumpkin and sunflower seeds
  • Hemp seeds
  • Parmesan cheese

Chop the onion and garlic and sauté them in a frying pan until the onion is translucent. Add the washed rice and wine to the sautéed mixture. Allow the alcohol from the wine to evaporate completely and gradually add a ladleful of broth at a time, until the rice doubles in volume.

Meanwhile, in a separate pan, sauté the spinach with a little garlic and blanch the peas in a pot of boiling water for 2 minutes.

In a food processor, puree some of the blanched peas (reserve the rest for later), the sautéed spinach, lemon juice, salt, and pepper. When the rice is almost cooked, add the pureed spinach, Parmesan cheese, and ghee butter. Finally, add the remaining peas and the accompaniments, and it's ready to enjoy. Bon appétit!
