These wraps are easy to make, nutritious and super practical (you can take them in your lunchbox or as a snack) and they are super versatile! The combinations are endless, just use your imagination!
This way you will be able to take advantage of many of the vegetables and fruits that you can find in your Equal Food basket!
Ingredients
2-4 people | 30 min. preparation time
- 6-8 large kale leaves
- 200g pleurothus mushrooms sautéed in olive oil with garlic, paprika, dried garlic and cumin powder
- 200g cooked quinoa
- 1/4 grated red cabbage
- 1 large grated carrot
- 1 red or yellow pepper (or mini mixed peppers) cut into strips
- 1 handful of chopped chives
Mango Vinaigrette:
- 1/2 mango cut into small cubes
- 1/3 red onion, chopped
- 1 handful of chopped coriander
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Avocado mayonnaise
- 1 small avocado or 1/2 large avocado
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and black pepper to taste
- A little water (optional)
Preparation method:
- Carefully separate the cabbage leaves from the head.
- Place a little bit of each filling ingredient in the center of the leaf and close the cabbage as if it were a wrap or tortilla.
- If the leaves are too small to close, you can simply stuff them and eat them with tacos!
