Here is a tasty, healthy and lighter suggestion that can be used as a side dish or as a main course! It is also very easy and practical to make. Let's do it!
Ingredients:
- 1 medium head of cauliflower
- 5 tablespoons of olive oil
- 1 tablespoon paprika
- 1 tablespoon dried garlic
- 1 tablespoon cumin
- 1 teaspoon turmeric
- 1 tablespoon Dijon mustard (optional)
- 1 teaspoon tomato paste (optional)
- Salt and pepper to taste
Toppings:
- Pomegranates
- Parsley
- Crushed walnuts with parmesan cheese and herbs
- Wash the cauliflower head well.
- Mix the olive oil, paprika, dried garlic, cumin, turmeric, mustard, tomato paste, salt and black pepper.
- Brush the mixture over the cauliflower head and place in the oven preheated to 200ºC.
- Bake in a baking dish covered with aluminum foil for 45-50 minutes.
- Remove the aluminum foil, reduce the temperature to 180ºC and bake for another 15 minutes (the time may vary depending on the oven).
- Remove and let cool.
- Finally, add the pomegranates, chopped parsley and the mixture of nuts, parmesan cheese and herbs.
