Pear, goat cheese and honey tart 🍐

Ingredients:

  • 1 sheet of shortcrust pastry (or puff pastry if you prefer)
  • 3 pears
  • 200 g of goat cheese
  • 40 g of honey
  • 20 g of walnuts
  • Honey for the finishing touch.
  • Fresh rosemary for finishing.
  • Walnuts for the finishing touch.

Preheat the oven to 180°C. In a bowl, crumble the goat cheese and add the honey and chopped walnuts. Mix well with a fork. Set aside.

Unroll the dough and, without removing the parchment paper, place it directly into a tart tin. Add the cheese mixture, leaving a 2-centimeter border free. Fold the border inwards and make pleats around the tart. Cut the pears into thin vertical slices and arrange them in the center of the dough. Drizzle with honey.

Preheat the oven to 180ºC (350ºF) and bake for 30 to 40 minutes, until the crust is golden brown. Remove one pie from the oven and let it rest for 10 minutes. Drizzle with honey and scatter rosemary leaves and chopped walnuts on top before serving.
