Quinoa and mango salad

Out of ideas for what to do with the mangoes in your Equal Food basket? Today we have a super easy recipe for you that's also very healthy and delicious!

This salad is ideal for preparing your meals during the week, so you can maintain a healthy diet without worrying about it. If you don't like mango, don't worry, you can use other fruits of your choice such as apples, pears, or even pomegranate. Let's cook!

Ingredients:

  • 1 cup of cooked quinoa
  • 1 Manga
  • 1 cucumber
  • 1/2 bell pepper
  • 1/2 tomato
  • 1 small can of black beans
  • 1/2 cup of corn
  • 1 sprig of cilantro

Sauce:

  • Juice of 1 lemon or lime
  • 1/2 tablespoon of smoked paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of cider vinegar
  • 1 teaspoon of cumin
  • 1/2 cup of olive oil
  • 1/4 teaspoon of sriracha

Cook your quinoa according to package directions. Sauté the corn in a skillet with a tablespoon of olive oil until golden brown. Peel and chop the mango, cucumber, bell pepper, and tomato. Chop the cilantro and reserve the stems for the sauce.

For the sauce: blend all the spices, cilantro stems, and olive oil in a blender. In a bowl, add and mix: cooked quinoa, mango, cucumber, red bell pepper, tomato, black beans, corn, cilantro leaves, and pour the sauce over the top!

Note: You can keep this salad in the refrigerator for 2-5 days without the dressing.
