Today we have a super easy recipe for you, which is also very healthy and tasty!

This salad is perfect for meal prepping during the week, so you can maintain a healthy diet without having to worry about it. If you don’t like mango, don’t worry, you can use other fruits of your choice, such as apples, pears or even pomegranate.

Ingredients:

  • 1 cup cooked quinoa
  • 1 Sleeve
  • 1 cucumber
  • 1/2 pepper
  • 1/2 tomato
  • 1 small can of black beans
  • 1/2 cup of corn
  • 1 bunch of coriander

Sauce:

  • Juice of 1 lemon or lime
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon cider vinegar
  • 1 teaspoon cumin
  • 1/2 cup olive oil
  • 1/4 teaspoon sriracha

Preparation

  1. Cook your quinoa according to the instructions on the package. Sauté the corn in a frying pan with a tablespoon of olive oil until golden brown.
  2. Peel and cut the mango, cucumber, pepper and tomato.
  3. Chop the coriander and reserve the stems for the sauce.
  4. For the sauce: blend all the spices, coriander stalks and olive oil in a blender.
  5. In a bowl, add and mix: cooked quinoa, mango, cucumber, red pepper, tomato, black beans, corn, coriander leaves and the sauce on top!

Note: You can keep this salad in the fridge for 2-5 days, without the dressing.
