Orange, cinnamon and candied fruit cake! 🍊

With Christmas just around the corner, we leave you with a suggestion from @cate_sweet_lab , a recipe full of Christmas colors and flavors, orange cake, to share with your families at this special time of year. 🎄

At the end, we'll leave you with two tips for flavor substitutions that will also ensure the typical Christmas flavor of this season. 🤤

Ingredients to make the orange cake:

2 + ½ cup self-raising flour

1 tablespoon ground flaxseed

1 of our large oranges (juice and zest)

2 cups of soy drink

2 tablespoons olive oil

1 tablespoon apple cider vinegar

2 tablespoons of yeast

1 tablespoon cinnamon

2 tablespoons brown sugar

150 grams of crystallized fruit (coated in flour)

For the frosting:

1 cup powdered sugar

1 tablespoon of juice from our oranges

For the almonds:

1 cup of our almonds with skin

2 tablespoons agave syrup

1 pinch of cinnamon

Preparation of orange cake:

1. Cake

Mix all the dry ingredients, except the yeast, plus the orange zest and mix.

  • Add the orange juice and vegetable milk. Mix. Next add the olive oil and vinegar. Stir until incorporated into the mixture. Add the yeast and, finally, the candied fruit (the fruit should be coated in a little flour so that it doesn't all end up at the bottom of the pan when the cake goes in the oven).
  • Pour into a non-stick pan brushed with coconut oil or another fat of your choice.
  • Bake for about 30/40 minutes at 180 degrees. Check and do the toothpick test to see if it is cooked.

Note: Time may vary from oven to oven.

2. The icing

  • Mix the two ingredients and let stand for about 5 minutes so that the sugar dissolves, add the topping when the cake is cold.

3. Almonds

  • Place the almonds in a frying pan and toast lightly. Add the agave syrup and a pinch of cinnamon, leave for another minute and remove. Place on greaseproof paper to make it easier to remove. You can place them whole on top of the cake or chop them roughly.

Substitutions :

  • For those who don't like candied fruit, you can replace it with raisins (also coat in flour like candied fruit).
  • For those who want a fresher and moister cake, you can use fresh apples from @equalfood cut into small cubes.

Notes :

As the orange cake has icing and candied fruit, the cake batter has little sugar. If you don't use icing, increase the sugar in the cake batter to about ¼ cup.

If you opt for the fresh apple option you can increase the sugar to about ¼ cup or ¼ if you don't use the glaze.

This orange cake was baked in a 7.5-inch Bundt pan.
