Sweet potato sticks!

Did you receive our sweet potato in your Equal Food basket and don't know what to do with it? There are many ways to use it: you can bake it, fry it, turn it into a puree, make a dessert, bread, or cake! But today we have a delicious suggestion: Sweet Potato Sticks with Creamy Avocado Sauce, a healthy and delicious option.

This recipe is great as a side dish, or to share with friends as a snack! Besides using sweet potatoes, you can also use our avocados to add a creamier touch to your meals.

Let's go! This is our recipe for Sweet Potato Sticks in partnership with @anasofia_rosado:

  • 1 large sweet potato or 3 small ones
  • 1 tbsp of olive oil
  • Salt to taste
  • 1 teaspoon of paprika
  • Spices to choose from

For the avocado sauce:

  • 1/2 avocado
  • 1 handful of cashews (soaked)
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • Juice of 1/2 lemon
  • 1 bunch of parsley
  • Salt and pepper to taste

Soak the cashews in hot water for 20 minutes. Discard the water and set aside. Cut the potatoes into sticks, season with olive oil, salt, and spices. Coat well and bake in the oven on a baking sheet lined with parchment paper. Bake at 200°C for 15 minutes.

For the sauce, add the cashews, avocado, lemon juice, olive oil, garlic, parsley, and season with salt and pepper. Blend everything with an immersion blender until very creamy (you can add a little water if needed).

Serve the sweet potato sticks with the green sauce and enjoy! Et voilà, you have a delicious and crispy snack! Bon appétit!
