Our blueberry muffins!

There are many ways to enjoy them: raw (just wash them!), with yogurt, to accompany waffles or pancakes, but today we have a delicious suggestion: Blueberry Muffins! Besides being very tasty, they are super nutritious and healthy.

Preparation time : 35 minutes (you can enjoy cooking while listening to your new favorite album or the latest episode of that podcast you love so much!)
Serves 12 people : 12 blueberry muffins

Vegetarian or vegan? These muffins contain eggs, which you can also find in our gift baskets. If you prefer a vegetarian or vegan version, the butter can be replaced with olive oil in the same quantity, or with vegan butter. This substitution may slightly alter the flavor of the blueberry muffins, but we assure you that if you follow the other steps they will remain delicious!

What will you need to make Blueberry Muffins?

  • 2 cups of Equal Food blueberry tea
  • 75g of brown sugar
  • 75g of softened butter
  • 2 eggs BIO Equal Food
  • 75g of protein yogurt (plant-based or not, choose a Greek-style, unsweetened yogurt)
  • 50g of almond milk
  • 1 teaspoon of Equal Food lemon juice
  • 175g of whole oat flour
  • 175g of wheat flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda

And now?

Beat the sugar and butter together. Add the eggs, one at a time, mixing well after each addition. Add the yogurt and mix again. Then, add the plant-based milk and lemon juice, mixing everything very well. Separately, add the flours, baking powder, and baking soda. Combine the liquid mixture with the flours and mix everything very well. Finally, fold in the blueberries. Bake in a preheated oven at 180°C (350°F) for 20 minutes. Enjoy!
