Vegetarian or vegan: vegan
Ingredients:
1 green pepper
1 potato
2 tomatoes
1 broccoli cabbage
2 carrots
2 handfuls of shiitake mushrooms
2 cloves of garlic
5 tbsp olive oil
Juice + zest of ½ lemon
1 handful of fresh parsley
Seasonings to taste: salt, garlic powder, black pepper, paprika, nutmeg, dried thyme, olive oil, balsamic vinegar

Preparation Method:
Cut the pepper, potato and carrots into small cubes. Cut the tomatoes into slices and divide the cabbage into small broccoli florets.
On each skewer, alternately place 2 mushrooms (whole), 2 broccoli, 2 pieces of potato and carrot and, finally, 1 slice of tomato.
Arrange the kebabs on a tray and season to taste. Bake in a preheated oven at 180ºC for about 25 minutes or until all the vegetables are cooked.
In a small bowl, place the 5 tablespoons of olive oil, the 2 cloves of minced garlic, the juice and zest of ½ lemon and the chopped fresh parsley. Season with salt to taste.
Serve the vegetable kebabs with the lemon and parsley sauce. Enjoy! :)
