Vegetarian or vegan: vegan

Ingredients:

  • 1 green bell pepper
  • 1 potato
  • 2 tomatoes
  • 1 head of broccoli
  • 2 carrots
  • 2 handfuls of shiitake mushrooms
  • 2 cloves of garlic
  • 5 tbsp olive oil
  • Juice and zest of ½ lemon
  • 1 handful of fresh parsley
  • Seasonings to taste: salt, garlic powder, black pepper, paprika, nutmeg, dried thyme, olive oil, balsamic vinegar.
  • Skewers

Cut the bell pepper, potato, and carrots into small cubes. Slice the tomatoes and divide the cabbage into small broccoli florets.

On each skewer, alternately place 2 whole mushrooms, 2 broccoli florets, 2 pieces of potato and carrot, and finally, 1 slice of tomato. Arrange the skewers on a baking sheet and season to taste. Bake in a preheated oven at 180ºC for about 25 minutes or until all the vegetables are cooked.

In a small bowl, combine 5 tablespoons of olive oil, 2 cloves of minced garlic, the juice and zest of ½ a lemon, and the chopped fresh parsley. Season with salt to taste. Serve the vegetable skewers with the lemon and parsley sauce. Enjoy! :)
