Red Velvet Pancakes

In addition to its pigmentation, beetroot has numerous benefits such as strengthening the immune system, lowering blood pressure, helping to fight inflammation, regulating intestinal transit, improving mental and cognitive function, etc.

These pancakes from @greensandnuts are super tasty and no one will be able to resist them!

Ingredients:

  • 2 eggs
  • 1 beet
  • Juice of 1 lemon
  • 4 tbsp brown sugar
  • 2 tbsp of cider vinegar
  • 30 ml of plant-based milk
  • 110g of wholemeal spelt flour
  • 30g of almond flour
  • 1 tbsp of coconut oil
  • 2 tsp ground flaxseed
  • 1 tsp baking powder
  • 1 tsp of baking soda
  • 1 tsp vanilla extract
  • 1 pinch of salt

Toppings: natural yogurt, agave, red berries. Grease a frying pan (or crepe pan) with coconut oil and add 1 to 2 tablespoons of the mixture at a time. Cook for about 1 minute on each side over low heat.

Serve the pancakes with natural yogurt, red berry syrup, and agave syrup. Enjoy! :)
