Broccoli stalk and leaf pesto 🥦

Ingredients

To make broccoli stalk and leaf pesto:

1 large broccoli

1 tablespoon lemon juice

2 chopped garlic cloves

2/3 cup basil

2/3 cup spinach

1/3 cashew or walnuts

2/3 cup spinach

1/4 teaspoon salt

1/4 teaspoon pepper

2 tablespoons olive oil

1/4 cup water

1 tablespoon nutritional yeast (optional)

 

Instructions

  1. Soak the cashews in hot water for 20 minutes.
  2. Cut off the stem and top of the broccoli. Steam it until tender.
  3. In a food processor, add the broccoli stalk and leaves (save the top for later), garlic, lemon juice, basil, cashew nuts, spinach, salt, pepper and water.
  4. Blend until it becomes a smooth paste, adding the olive oil little by little.
  5. Serve with spaghetti and the broccoli tops. The broccoli stalk and leaf pesto is ready!
