
Ingredients
To make broccoli stalk and leaf pesto:
1 large broccoli
1 tablespoon lemon juice
2 chopped garlic cloves
2/3 cup basil
2/3 cup spinach
1/3 cashew or walnuts
2/3 cup spinach
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1/4 cup water
1 tablespoon nutritional yeast (optional)
Instructions
- Soak the cashews in hot water for 20 minutes.
- Cut off the stem and top of the broccoli. Steam it until tender.
- In a food processor, add the broccoli stalk and leaves (save the top for later), garlic, lemon juice, basil, cashew nuts, spinach, salt, pepper and water.
- Blend until it becomes a smooth paste, adding the olive oil little by little.
- Serve with spaghetti and the broccoli tops. The broccoli stalk and leaf pesto is ready!
