Broccoli stalk and leaf pesto 🥦

Ingredients:
To make pesto from broccoli stalks and leaves:

  • 1 large broccoli
  • 1 tablespoon of lemon juice
  • 2 cloves of garlic, chopped
  • 2/3 cup of basil
  • 2/3 cup of spinach
  • 1/3 cashew nuts or walnuts
  • 2/3 cup of spinach
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 tablespoons of olive oil
  • 1/4 cup of water
  • 1 tablespoon of nutritional yeast (optional)

Soak the cashews in hot water for 20 minutes. Cut off the stalk and top of the broccoli. Steam it until tender. In a food processor, add the broccoli stalk and leaves (save the top for later), garlic, lemon juice, basil, cashews, spinach, salt, pepper, and water.

Blend until smooth, adding the olive oil gradually. Serve with spaghetti and the broccoli tops. Your broccoli stalk and leaf pesto is ready!
