Making fresh juices at home is one of those routines that brings real pleasure: fresh fruit, seasonal vegetables, vibrant flavours and that feeling of starting the day with something light. But after a perfect juice, the same question always comes up… what do you do with the pulp left in the juicer? In many homes, that pulp inevitably ends up in the bin, contributing to food waste (one of the biggest challenges in the modern kitchen).

In reality, that pulp is a valuable ingredient. It’s full of fibre, aroma and colour, and still holds part of its original nutrients. Whether it’s carrot, beetroot, apple, pear or orange, it can all be reused. And when it comes to smart reuse, nothing beats the simplicity of moist little cakes made from what would normally be thrown away.

To make juice pulp muffins you’ll need:

  • 1 cup of juice pulp (carrot, beetroot, apple…)

  • 1 cup of flour

  • 1/2 cup of sugar

  • 2 eggs

  • 1 teaspoon baking powder

  • Cinnamon to taste

Start by mixing all the ingredients in a bowl until you get a smooth batter. The texture should be creamy and yes, you’ll see small fibres from the fruit or vegetables. That’s exactly what makes the muffins naturally moist without needing oil or butter. Divide the batter between moulds and bake in a preheated oven at 180 °C for about 20 minutes. They’re ready when they’re lightly golden on top and firm to the touch.

If you’d like to personalise the recipe, you can add chopped nuts, seeds, citrus zest or chocolate chips.
