Banana Bread 🍌

Another surprise from our friend at greensandnuts . The ideal recipe to make when bananas start to get too ripe. The bananas become sweeter and it's a natural way to sweeten the cake.

Vegetarian or vegan: vegetarian

Ingredients:

  • 3 ripe bananas from Madeira / the Azores
  • Juice of 1 orange
  • 2 eggs
  • 250g of wholemeal spelt flour
  • 6 tbsp coconut sugar
  • 1 tsp baking powder
  • 1 tsp of baking soda
  • 1 pinch of salt
  • 100 ml of plant-based milk
  • 1 tbsp peanut butter
  • 2 tbsp olive oil
  • 2 c. 70% chocolate chip soup
  • Peanut butter to taste (for finishing)

In a bowl, mash the 3 bananas. Add the orange juice and mix until a smooth paste forms. Add the eggs, plant-based milk, olive oil, and peanut butter. Mix again.

In a bowl, mix the flour, sugar, baking powder, baking soda, and a pinch of salt. Pour in the previous mixture and gently fold it in. Incorporate the chocolate chips into the cake batter.

Place the mixture in a rectangular baking dish greased with olive oil and dusted with flour, and bake in a preheated oven at 180ºC for 45 minutes, or until fully cooked.

Let it cool and finish with peanut butter to taste. Enjoy! :)
