
Another surprise from our friend greensandnuts . The ideal recipe to make when the bananas start to get too ripe. The bananas become sweeter and it is a natural way to sweeten the cake.

Ingredients:
- 3 ripe Madeira/Azores bananas
- Juice of 1 orange
- 2 eggs
- 250g wholemeal spelt flour
- 6 tbsp coconut sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 pinch of salt
- 100 ml of vegetable drink
- 1 tbsp peanut butter
- 2 tbsp olive oil
- 2 c. 70% chocolate chip soup
- Peanut butter to taste (to finish)
Preparation Method:
- In a bowl, mash the 3 bananas. Add the orange juice and mix until a smooth paste forms.
- Add the eggs, vegetable milk, olive oil and peanut butter. Mix again.
- In a bowl, mix the flour, sugar, yeast, baking soda and a pinch of salt. Pour in the previous mixture and mix slowly.
- Add the chocolate chips to the cake batter.
- Place the mixture in a rectangular pan greased with olive oil and flour and bake in a preheated oven at 180ºC for 45 minutes or until fully cooked.
- Let it cool and finish with peanut butter to taste. Enjoy! :)
