Banana Bread 🍌

Another surprise from our friend greensandnuts . The ideal recipe to make when the bananas start to get too ripe. The bananas become sweeter and it is a natural way to sweeten the cake.

Preparation time: 50 min.

Serves x people: 8

Vegetarian or vegan: vegetarian

Ingredients:

  • 3 ripe Madeira/Azores bananas
  • Juice of 1 orange
  • 2 eggs
  • 250g wholemeal spelt flour
  • 6 tbsp coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 100 ml of vegetable drink
  • 1 tbsp peanut butter
  • 2 tbsp olive oil
  • 2 c. 70% chocolate chip soup
  • Peanut butter to taste (to finish)

Preparation Method:

  1. In a bowl, mash the 3 bananas. Add the orange juice and mix until a smooth paste forms.
  2. Add the eggs, vegetable milk, olive oil and peanut butter. Mix again.
  3. In a bowl, mix the flour, sugar, yeast, baking soda and a pinch of salt. Pour in the previous mixture and mix slowly.
  4. Add the chocolate chips to the cake batter.
  5. Place the mixture in a rectangular pan greased with olive oil and flour and bake in a preheated oven at 180ºC for 45 minutes or until fully cooked.
  6. Let it cool and finish with peanut butter to taste. Enjoy! :)
