Broccoli Leaf & Stem Pesto 🥦

1 large broccoli

1 tablespoon lemon juice

2 chopped garlic

2/3 cup basil

2/3 cup spinach

1/3 cup cashews or walnuts

2/3 cup spinach

1/4 teaspoon salt

1/4 teaspoon pepper

2 tablespoons olive oil

1/4 cup water

1 tablespoon nutritional yeast (optional)



1. Soak the cashews in hot water for 20 minutes.

2. Cut off the stalk and top of the broccoli. Steam it until tender.

3. In a food processor, add the stalk and leaves of the broccoli (save the top for later), the garlic, lemon juice, basil, cashews, spinach, salt, pepper and water.

4. Grind until it becomes a smooth paste, adding the olive oil little by little.

5. Serve with spaghetti and the top of the broccoli. Now it's ready!
